Place the beans in a pan or on a Blackstone griddle and heat over a medium heat.
Melt the butter in a pan or on a griddle over low heat then pour in the eggs and season with salt and pepper.
Gently and continuously stir the eggs until they are almost set, about 3 minutes.
Add the cheese to the eggs and continue stirring over low heat until the cheese is melted.
Using a slotted spoon to drain any liquid, divide the beans between 4 bowls.
Use a knife to cube the avocado just before serving.
Top with beans in the bowls with scrambled eggs, avocado and salsa.
Notes
Instead of beating the eggs in a bowl, you can crack the eggs and use a fork to scramble them directly on your Blackstone or in your skillet.
I like to cube the avocado and top the breakfast bowl just before serving. If you want to cut the avocado in advance, you will need to toss it in a little lime or lemon juice to keep it from turning brown.
