Camping For Foodies Breakfast Camping Recipes: This meal is easy to prep and cook. This satisfying burrito has delicious flavors and textures and makes a great brunch item.
2jalapeno peppersseeded and finely diced (see note #1)
Burrito & Filling
6slicesthick cut bacon
1/2oniondiced
6eggsbeaten
Salt and pepper to taste
1cupshredded cheddar cheese
4spinach wraps
Instructions
In a medium sized bowl, mix the avocados, lemon juice, green onion and jalapeno peppers. Set in cooler till ready to serve (see note #2).
In a medium sized skillet over medium heat, fully cook the bacon then remove it from the pan and place it on paper towels to drain and cool.
Crumble bacon and set aside.
Remove most of the bacon grease from the skillet but leave enough to coat the pan or Blackstone and sauté the onion.
Sauté the onion until tender, stirring occasionally.
Reduce heat to low, and add the eggs, salt and pepper to the pan.
Gently cook the eggs over low heat stirring occasionally.
When the eggs are just about cooked through add the cheese stirring until the cheese is incorporated.
Place spinach wraps on table and spoon even amounts of the bacon, egg mixture and the avocado mixture into the center of the wraps.
Fold the wraps and enjoy!
Notes
Check the heat levels because all peppers are not created equally! You may want to add more or less or possibly even eliminate them if your camping clan doesn’t like heat.
If not using immediately, cover with plastic wrap being careful to press the plastic directly over all of the exposed avocado so it is not exposed to the air. This will prevent the avocado from turning brown.
Large Crowd Camp Cooking Tip: This is a recipe that is really easy to scale for a crowd. Make a big batch of avocado mixture and refrigerate until ready to serve. Then, make a big batch of the egg mixture. Then, set up an assembly line and place a scoop of both mixtures in the center of each wrap. Now let each camper fold their own tortilla to eat and enjoy.
