Camping For Foodies Breakfast Camping Recipes: This simple French toast recipe gets its golden color and crispy texture by cooking over a campfire on a cast iron griddle.
4slicesTexas toastor other, thick-cut bread (see * Note)
2large eggs
1/2cupmilk
1teaspooncinnamon
1/2teaspoonvanilla extract
Pinchof salt
2tablespoonsbutteror as needed, divided
4fresh strawberries
1/4cupreal maple syrup
Instructions
Prepare your campfire for cooking over medium heat. If you prefer to use your camp stove or RV stove, prepare the equipment for cooking on a level surface.
In a shallow bowl, beat the eggs until they are thoroughly combined. Add the milk, sugar, cinnamon, vanilla extract and salt, mixing to combine.
Melt half the butter on a cast iron griddle or skillet over medium heat.
Place the bread slices in the egg mixture and soak, turning to coat, until the bread is completely saturated. Let the excess drip off before placing it on the cast iron griddle.
Working in batches, if necessary, cook the egg-dipped bread in the hot butter until it is golden brown, about 3 minutes per side. (see ** Note)
Once the toast is golden brown on one side (about 3 minutes), flip and cook the other side until it is golden brown (about 3 more minutes). Remove from griddle and serve hot topped with remaining butter, fresh berries and syrup.
Notes
*NOTE: This recipe serves 2, scale-up as necessary to feed more campers.**NOTE:Depending on the size of your griddle or cast-iron skillet, you should be able to cook 6-8 slices of bread at the same time. If you have to work in batches (and if everyone wants to eat at the same time) set aside the finished pieces and cover with a top piece of foil to keep the French toast warm while you cook the remaining bread slices.
