Instructions
Cube meat and toss in Worcestershire sauce, marinate a few hours before cooking.
Cut 4 pieces of heavy-duty foil, approximately 24 inches long (see Note #3).
Set out ingredient bar and let each camper build their own packet starting with the meat then season it with salt and pepper.
Add ingredients you like and skip the ones you don't but be careful not to over-stuff the packets (see Note #4).
Fold the packet for cooking making sure it is tightly sealed. Watch my video if you need tips.
Cook the packets on a grate for about 10 minutes over medium heat (campfire coals or grill, see Note #5).
Turn packets and cook for another 10 minutes.
Total cooking time will be approximately 20-30 minutes depending on the ingredients chosen. Check for doneness, be careful not to burn yourself on the hot steam when you open the packet.
Remove the packets from the campfire to serve.
Discard rosemary sprigs before serving. Top with fresh parsley for garnish, if desired
Notes
Yes, we really do LOVE garlic that much! We put 4 cloves in each packet but they are whole cloves that really flavor the meat and veggies during cooking; you don’t have to eat the cloves but the garlic lovers in your camping crowd will want to indulge in these little babies.
You may need to add a splash of water to the packet:
If you don't use the tomatoes and mushrooms, because they provide moisture
If you place the packets directly on the coals rather than above the coals on a cooking grate
If you are using regular foil instead of heavy duty foil, you need two sheets per packet instead of one.
If everyone has different ingredients in their foil packets, you will want to find a way to mark them so each camper gets their packet with their custom designed stew.
Use the “hand test”: hold the palm of your hand about 5 inches above the heat source, pull it away before it hurts, 6-7 seconds = medium heat.
