Campfire meals in foil are fun and easy, but are they tasty? This Campfire Hobo Stew Recipe In Foil Packets is a step above the traditional hobo stew but it is still super easy and fast-cooking. With the simple addition of a fresh rosemary sprig, you’ll be amazed at how flavorful this traditional camp meal becomes.

How To Make Hobo Stew Foil Packets
Foil packets are popular in the summer but they make great winter camping recipes too that can be cooked right over a campfire!
Grilling In Foil Packets = Fun + Easy Clean-Up

There are benefits beyond the fun factor when you are grilling in foil packets.
- The foil doubles as your cooking pan as well as your dinner plate making clean up a breeze.
- My hobo stew is a favorite on our list of easy foil packet meals that are perfect for cooking over fires, but, they can also be cooked on grills which is great when you want to use propane rather than a campfire.
The Hobo Stew Ingredient Bar

Step 1. Set up an ingredient bar with prepared ingredients. Got picky eaters? No problem!
Have a hobo stew ingredient bar set up so each camper can build their own stew with all of the ingredients they like, and none that they don’t. Because the packets are prepared for each individual, they make easy camping meals for large groups as well as simply making smaller portions when you are camping solo or just preparing camping meals for two!
You can really do any combination of veggies and proteins, just make sure your ingredients all get done cooking at the same time. That means cut/chop the ingredients so they need the same amount of cooking time. Remember, potatoes and carrots require more cooking time than onions, peas and mushrooms.
- Camp Cooking Tip: If you are using potatoes in your campfire stew in foil, make sure you cut them small enough to ensure they are fully cooked at the same time the rest of the ingredients in the foil packet are done (especially the meat, nobody likes overcooked dried-out meat.)

Campfire Tin Foil Cooking: Fold The Perfect Foil Packet

Step 2. Prepare the tinfoil.

Use ONE sheet of heavy duty foil or TWO sheets of the regular stuff to make sure your foil packet is sturdy enough for the hot campfire cooking environment.
Step 3. Add ingredients to packet and fold to seal tightly.
- Add the ingredients you like but be sure not to over-stuff the foil packet.
- You need to fold the foil into a packet that closes fully but still leaves room inside for the steam to build and cook the ingredients.

- Don’t forget: If everyone has different ingredients in their foil packets, you will want to find a way to mark them so they land on the proper camper’s plate for eating.
Step 4. Cook the packets over the campfire or a BBQ grill.

Camping Cooking Tip: Make sure your campfire has a bed of hot coals before you begin cooking. You want to cook this recipe over medium heat.
Hand Test For Cooking Temperatures
You don’t need a thermometer to determine the temperature of your heat source for cooking. Here are steps for the “hand test”.
- Hold the palm of your hand about 5 inches above the heat source (campfire coals, charcoal briquettes, propane grill etc.) you’re using for cooking. (Make sure nothing is flammable, like clothing or jewelry.)
- Pull your hand away from the heat before it hurts and note how many seconds have passed. Example: 6-7 seconds = medium heat.

Low Heat | 250-325°F (120-160C) | 9-10 seconds |
- I like cooking these foil packets on the campfire grate over hot coals but you can also set them on the hot rocks that surround the campfire; as long as there is enough heat to cook the ingredients in the foil packets, you are good to go.
- Alternatively, you can place the packets directly on hot coals but avoid putting them in the flames.
- When it is time to flip the foil packets during cooking, you should use Extra-Long Tongs for protection from the heat of the campfire and the hot foil packets.
Flip Your Foil Packets During Cooking
Turn the packets about halfway through cooking.
Total cooking time will be approximately 20-30 minutes and will depend on the ingredients inside the foil packs as well as the temperature of the campfire.
Step 5. Garnish and serve. When your hobo stew is done, carefully remove the foil packets from the campfire to serve. Be careful not to burn yourself on the hot steam when you open the packet. Garnish with a little chopped fresh parsley and enjoy.
Even though we eat our hobo stew directly out of the foil packet, I like to use a camp plate to add sturdiness. Because we don’t actually put the food on the plate, there is no cleanup after the meal; we just toss the foil in the trash and we’re ready for dessert.
These foil packet meals also cook beautifully on a charcoal or propane gas grill. Because we live and camp mostly in Arizona, we have to deal with fire restrictions when we are camping which means we have to cook with propane rather than campfires.

Campfire Hobo Stew Recipe In Foil Packets
Equipment
Ingredients
- 2 pounds beef chuck trimmed, cubed
- 2 tablespoons Worcestershire sauce
- Salt and pepper to taste
- 1/2 cup onions diced
- 1 cup baby carrots
- 1/4 cup frozen peas defrosted
- 1/2 cup fresh mushrooms sliced
- 16 cloves garlic whole but peeled (see Note #1)
- 1 cup cherry tomatoes
- 1 cup baby potatoes cubed (these will probably need to be quartered in order to have the potatoes sufficiently cooked at the same time as the rest of the food in the foil packets.)
- 1 splash water if necessary (see Note #2)
- 4 sprigs fresh rosemary these flavor your food during cooking but should be thrown out before eating
Optional Garnish
- 1 bunch of fresh parsley chopped
Instructions
- Cube meat and toss in Worcestershire sauce, marinate a few hours before cooking.
- Cut 4 pieces of heavy-duty foil, approximately 24 inches long (see Note #3).
- Set out ingredient bar and let each camper build their own packet starting with the meat then season it with salt and pepper.
- Add ingredients you like and skip the ones you don’t but be careful not to over-stuff the packets (see Note #4).
- Fold the packet for cooking making sure it is tightly sealed. Watch my video if you need tips.
- Cook the packets on a grate for about 10 minutes over medium heat (campfire coals or grill, see Note #5).
- Turn packets and cook for another 10 minutes.
- Total cooking time will be approximately 20-30 minutes depending on the ingredients chosen. Check for doneness, be careful not to burn yourself on the hot steam when you open the packet.
- Remove the packets from the campfire to serve.
- Discard rosemary sprigs before serving. Top with fresh parsley for garnish, if desired
Notes
- Yes, we really do LOVE garlic that much! We put 4 cloves in each packet but they are whole cloves that really flavor the meat and veggies during cooking; you don’t have to eat the cloves but the garlic lovers in your camping crowd will want to indulge in these little babies.
- You may need to add a splash of water to the packet:
- If you don’t use the tomatoes and mushrooms, because they provide moisture
- If you place the packets directly on the coals rather than above the coals on a cooking grate
- If you are using regular foil instead of heavy duty foil, you need two sheets per packet instead of one.
- If everyone has different ingredients in their foil packets, you will want to find a way to mark them so each camper gets their packet with their custom designed stew.
- Use the “hand test”: hold the palm of your hand about 5 inches above the heat source, pull it away before it hurts, 6-7 seconds = medium heat.
