Instructions
In a non-reactive bowl, combine the berries and sugar. Set aside to macerate the berries, stirring occasionally. It will take about 20-30 minutes for the berries to break down a bit and form a nice juice.
Combine the pancake mix with the water. If batter is too thick, slowly add more water until it is a pourable consistency. Camp Cooking Tip: Place the pancake mix in a sport bottle. At the campsite, add the water and shake vigorously until the mixture is just combined, it should only take a minute or two. Now you have pourable pancake batter inside the sport bottle ready for cooking on your cast iron griddle.
Heat cast iron griddle over medium heat using campfire coals, propane stove or conventional stove as a heat source.
Liberally coat the griddle with cooking spray.
Pour pancake batter on to griddle to form the size of pancake you enjoy.
Wait for bubbles to form in the batter, then they will begin to pop, that is when it is time to flip the pancakes to cook the second side, about 3 minutes total.
Cook until golden brown and remove from griddle.
Add a bit of butter to each pancake while they are hot. Top with berry mixture. Serve warm.
