4small potatoeswashed and thinly sliced (about 1/8 inch - 1/4 inch thick)
1small onionsliced
1clovegarlicminced
1green bell peppersliced
3tablespoonsbutter

Instructions
Lay a 2 foot-long piece of heavy duty foil on a flat surface.
Layer half of the potatoes, onion, garlic and bell pepper in the center of the foil.
Place half of the small pieces of the butter around the veggies, evenly dotting the pile of vegetables.
Liberally add salt and pepper over all of the veggies and butter.
Repeat steps 2-4 until you have all of the vegetables, butter, salt and pepper stacked on the foil.
Fold the foil packet to completely seal it.
Cook over medium heat of campfire coals or a charcoal or propane grill until the potatoes are done to your desired tenderness, turning every 10 minutes or so to ensure even cooking. Total cooking time will be approximately 30-40 minutes.
