1(18 oz)boxed brownie mix prepared according to package directions
1/2cupchopped pecans
6large rectangular sheets graham crackersbroken into bite-sized pieces
2cupsmini marshmallows
Instructions
Pre-heat 10” Dutch oven to 350 degrees (21 total coals = 14 top / 7 bottom).
In a bowl, mix the marshmallows and graham cracker pieces.
In a separate medium sized bowl, prepare brownie mix according to package directions (you will usually need to mix in water, vegetable oil and eggs) and then stir in the pecans.
Line the Dutch oven with a parchment paper liner, being careful not to burn yourself. (see Note 1)
Pour the brownie mixture into the pre-heated Dutch oven lined with parchment paper, cover and bake about 15 minutes, you are par-baking the brownies here, not fully cooking them.
Now, remove the lid and sprinkle the marshmallow and graham cracker mixture over the top of the par-baked brownies, re-cover the Dutch oven and continue baking another 15-20 minutes until the brownies are done and an inserted toothpick or knife comes out clean and the marshmallows are toasted.
Lift the brownies out of the Dutch oven using the parchment paper exposed edges as handles, don’t burn yourself because the oven is still very hot.
Cool the brownies slightly and serve warm.
Notes
If you don’t want to use a parchment paper liner you can use a foil liner or just bake the brownies directly in the Dutch oven but make sure you coat the bottom and sides of the oven with cooking spray before you spoon in the batter.
Camp Cooking Tip: When you are making Dutch oven baked goods, be sure to turn your oven during the cooking process to ensure even baking, every 10 - 15 minutes, turn the lid and the oven (in opposite directions) about 1/4 turn throughout the entire baking time.
