Ingredients

can black beans
drained and rinsed

(10 oz)
bag corn tortilla chips

cup
shredded Monterey Jack cheese

cherry tomatoes
sliced

bunch fresh cilantro
chopped

avocado
sliced

cup
sour cream
Instructions
In medium sized skillet over medium heat, melt the butter.
Add the onion and garlic, stirring occasionally and cooking till softened.
In a medium sized bowl, beat eggs with salt and pepper.
Add egg mixture to skillet with veggies. Gently stirring to cook eggs.
When eggs are almost cooked through, add beans by folding into eggs and continue cooking until eggs are fully cooked.
In separate large cast iron skillet, layer half of the tortilla chips, egg mixture and cheese, then melt cheese with a
camping torch
.
Now layer the remaining half of the same ingredients and melt the cheese again. You end up with two layers of chips, eggs, beans and melted cheese.
Top the breakfast nachos with tomatoes, cilantro, avocado and sour cream.
