It’s always fun to do red, white and blue camping food in celebration of the 4th of July holiday.
So, when Destry Jetton of Channel 12’s Arizona Midday asked me to come to the show and share some recipes just before the 4th I couldn’t resist featuring my 4th of July Red White & Blue Topped Pound Cake camp recipe.

Red, White And Blue Topped Grilled Pound Cake
The red comes from the raspberries, the white from the mascarpone cheese and the blue from the blueberries.
The lemon zest and juice really make the berries pop.

I like to use my Cast Iron Grill Pan to toast the pound cake. Make sure you rotate the cake during toasting so you get those cute cross-hatched grill marks! 🙂 You can also toast these using a BBQ grill or a regular non-stick pan (like how you make grilled cheese) but you won’t get the cross-hatched grill marks. 🙁

One bummer about using a grill pan is cleaning up afterwards. Grill Pan Scrapers are an awesome way to overcome that! The “teeth” of the scrapers fit between the ridges of the grill pan and easily remove stuck-on food. BAM! That makes a camper happy!

Be careful not to burn yourself when handling cast iron skillets and grill pans. A Silicone Hot Handle Holder will protect hands from heat up to 450°F!
