Flamethrower Bruschetta camp recipes

Sometimes you just need to improvise while creating culinary bliss in the wild! I need a broiler…What to do, what to do? Answer: Get the Flamethrower! And, when kitchen duty includes tools and fire…you better believe my husband is racing to step up to his “manly duties”!!! Combine that with the fact that I have man eating basil plants taking over my backyard herb and flower baskets and the Flamethrower Bruschetta was born! Psst we’re compensated…see our disclosures.

6 Roma tomatoes, chopped
1/2 c sun-dried tomatoes, packed in oil
3 cloves garlic, minced
1/4 c olive oil
2 T balsamic vinegar
1/4 c fresh basil leaves
1/4 t salt 1/4 t pepper
1 French baguette, sliced in approximately ½ in slices
2 c shredded mozzarella cheese
For the topping:
Combine in a medium sized glass or plastic bowl: Roma tomatoes, sun-dried tomatoes, garlic, olive oil, vinegar, basil, salt, and pepper. Let set at room temperature so flavors combine while toasting the bread.
For the bread slices:
Place bread slices on tray and toast using your favorite flamethrower—make sure you keep the flame moving so you don’t burn your bread.
Spoon topping over the baguette slices and then top with mozzarella cheese.
Use your flamethrower to melt the cheese. Makes about 12 servings.
