Our camp menu changes with the plans for the weekend. Are we doing day-long hikes or catching up on reading while lounging around the campsite? For us, activity plans drive the food menu and complexity of meal preparation. When breakfast is heavy and dinner is hearty, lunch is often not a priority. In those cases…when lunch is just too much…we like to do a fun “lunchetizer” (appetizers for lunch.) One quick and easy favorite is the cream cheese veggie round platter. Here’s how you make them. Cream Cheese Veggie Rounds
For the bread:
French Baguette slices (approximately 24 slices)
For the cream cheese, mix and spread on baguette slices:
8 oz. cream cheese
.7 oz. package dry Italian salad dressing mix
For the topping, sprinkle over the top:
1 cup broccoli crowns, chopped in small pieces
2 tomatoes, chopped in small pieces
1 cup shredded sharp cheddar cheese
