Camping For Foodies Dinner Camping Recipes: This Dutch Oven Latin Campfire Chicken is an easy one pot recipe that uses simple ingredients to create fantastic flavors.

Ingredients

boneless skinless chicken breasts
cubed into bite-sized pieces

prepared hot salsa
1/2
cup
chicken broth

teaspoons
ground cumin *
1/2
teaspoon
allspice *
1/2
teaspoon
salt *
1/4
teaspoon
pepper *
4
garlic cloves
minced
1
large sweet potato
peeled and cubed into bite-sized pieces approximately 1/4 – 1/2 inch cubes
1
red bell pepper
chopped
2
(15 oz)
cans black beans, drained
1
bunch fresh cilantro
chopped
Instructions
Ingredients marked with * can be measured and mixed at home.
Prepare campfire for cooking over low heat. Alternatively, you can use charcoal briquettes or a propane camp stove.
Stir together the chicken, salsa, broth, cumin, allspice, salt, pepper, garlic, sweet potato, bell pepper and beans in a 12-inch camp Dutch oven.
Cover and simmer over medium-low heat until the chicken is cooked through and the potatoes are tender, about 45-60 minutes.
Now, remove the lid and cook uncovered until all of the liquid is absorbed to form a thickened sauce, about 20-30 minutes.
Top with cilantro and serve.
