Camping For Foodies Sides Camping Recipes: These crispy potato wedges are so easy and tasty, you'll never want to deep fry French fries again.

Ingredients
2
large russet potatoes
scrubbed and cut into wedges about 1 inch thick (6-8 wedges)
1/3
cup
olive oil
1
teaspoon
fresh rosemary leaves
finely chopped (can replace fresh herbs with 1/3 teaspoon dried)
1
teaspoon
cumin powder
1
teaspoon
ground chipotle chile powder
Salt and pepper
to taste
Ketchup or Chipotle Mayonnaise
(optional for serving)
Instructions
Preheat a gas grill, charcoal grill or campfire coals to medium heat, 350-450 F degrees. (see * Note)
Prepare ingredients, as directed.
In gallon freezer bag and add oil, rosemary, cumin, chipotle chile powder salt and pepper. Mix ingredients by squeezing outside of bag.
Add potatoes to freezer bag, close and shake until potatoes are evenly covered with oil and spice mixture.
Place wedges on grilling grate. Grill covered 25-30 minutes or until potatoes are tender inside and browned with grill marks, turning occasionally.
Suggested serving condiment: Ketchup or
Chipotle Mayonnaise
Notes
* Note:
If you don’t have a thermometer on your grill, use the “hand test”: hold the palm of your hand about 5 inches above the heat source, pull it away before it hurts, 5-6 seconds = medium heat.
