Easy Grilled Potato Wedges: Cook Over Campfire Or Charcoal Grill

The best camping side dishes don’t start with a can of beans! You don’t ever have to deny your craving for fries on a camping trip with this easy and fast Grilled Potato Wedges that can be cooked over a campfire or charcoal grill.

Sure, you could serve a burger with potato chips but why would you when you can make these fantastic grilled fries? See how simple they are in the VIDEO! I like serving them with my Chipotle Mayonnaise as a dipping sauce!

How To Make Grilled Potato Wedges

Step 1. Prepare your ingredients, heat source and equipment as directed.

If preparing as one of our easy campfire recipes, you’ll want to use a nicely flavored hardwood like oak or hickory. Start your logs early enough to let them burn down to produce nice coals for cooking, you don’t want to cook over flames.

If preparing as one of our camping grill recipes, you can use a propane gas grill or a charcoal grill. For charcoal, get your briquettes going first because the prep work is so fast, you’ll actually need to give the charcoal a head start! I like using my Rapid Fire Chimney Starter to start my charcoal because it lights quickly without starter fluid.

You will be grilling the wedges over medium heat. About 5-6 seconds using the Hand Test, see chart below.

Hand Test For Cooking Temperatures

You don’t need a thermometer to determine the temperature of your heat source for cooking. Here are steps for the “hand test”.

  • Hold the palm of your hand about 5 inches above the heat source (campfire coals, charcoal briquettes, propane grill etc.) you’re using for cooking. (Make sure nothing is flammable, like clothing or jewelry.)
  • Pull your hand away from the heat before it hurts and note how many seconds have passed. Example: 6-7 seconds = medium heat.

Hand Test For Cooking Temperatures

Step 2. Slice potatoes and chop the rosemary. Scrub the potatoes, pat dry and cut into wedges about 1 inch thick. Give the rosemary a quick mince.

Step 3. Mix marinade and potatoes. Now add the oil and spice mixture directly to a Gallon Freezer Bag. That way you can avoid using a large bowl you have to wash! You can just squeeze the bottom of the bag to mix all of the ingredients together before adding the potatoes. After you add the potatoes, just close the seal on the bag and shake/toss until the fries are coated with the oil/spice mixture.

Step 4. Grill the wedges. Now, place the potato wedges on the grill grate and cover, turning occasionally. Cook until potatoes are fork tender and cooked through with nice charred grill marks.

I like using my little Smokey Joe Portable Grill when I am grilling at the campsite because I can easily control the heat with the vents but you can use any type of grill or campfire grill and if it does not have a tight fitting lid, just use aluminum foil to cover the potato wedges as they cook.

Camp Cooking Tip: I avoid filling large pots of water just to boil veggies or pasta at the campsite. Because these potatoes are not par-boiled, they take a little longer to cook over medium heat, about 30 minutes, rather than using par-cooked wedges over medium-high heat.

Step 5. Serve hot with your favorite condiments. I like serving these grilled potato wedges with my easy Chipotle Mayonnaise which has fantastic flavor as a dipping sauce but you could just use plain ketchup too.

You can serve these grilled potatoes with anything you would serve with French fries. They are the perfect side dish with burgers, hot dogs, grilled chicken, steak, BBQ sandwiches etc.

Leftovers

Store leftovers in a refrigerator or cooler in airtight containers. I like chopping them up and throwing them in a pan with some butter, garlic and onions to serve with fried eggs for breakfast.

Ingredients

  • 2 large russet potatoes scrubbed and cut into wedges about 1 inch thick (6-8 wedges)
  • 1/3 cup olive oil
  • 1 teaspoon fresh rosemary leaves finely chopped (can replace fresh herbs with 1/3 teaspoon dried)
  • 1 teaspoon cumin powder
  • 1 teaspoon ground chipotle chile powder
  • Salt and pepper to taste
  • Ketchup or Chipotle Mayonnaise (optional for serving)

Instructions

  • Preheat a gas grill, charcoal grill or campfire coals to medium heat, 350-450 F degrees. (see * Note)
  • Prepare ingredients, as directed.
  • In gallon freezer bag and add oil, rosemary, cumin, chipotle chile powder salt and pepper. Mix ingredients by squeezing outside of bag.
  • Add potatoes to freezer bag, close and shake until potatoes are evenly covered with oil and spice mixture.
  • Place wedges on grilling grate. Grill covered 25-30 minutes or until potatoes are tender inside and browned with grill marks, turning occasionally.
  • Suggested serving condiment: Ketchup or Chipotle Mayonnaise

Notes

* Note: If you don’t have a thermometer on your grill, use the “hand test”: hold the palm of your hand about 5 inches above the heat source, pull it away before it hurts, 5-6 seconds = medium heat.
