Approximately 4 tablespoons Cajun Spice Mixthe amount you use will vary depending on the size of the fillets and how spicy you want the fish to taste
Approximately 2 tablespoons butter
Approximately 2 tablespoons vegetable oil
Instructions
Heat a cast iron skillet over med/high heat.
Heat the butter/oil combination to high heat but not to smoking/burning; you will know the fat mixture is hot enough when you put a corner of the fish in and you see little bubbles (see note below).
Pat fish dry with paper towels before adding Cajun Spice Mix.
I say the butter and vegetable oil measurements are approximate because it depends on the size of your skillet and the size of your fish. Just put in equal parts of each, enough to generously cover the bottom of your pan because you’re basically pan-frying this fish. Here are a few more useful links:Dutch Oven Temperature Charthttps://www.campingforfoodies.com/dutch-oven-temperature-chart/Camping For Foodies Recipes Listhttps://www.campingforfoodies.com/camping-recipes-list/
