This meal is quick to prep and cook and it’s a real crowd pleaser. The ease of cooking and cleanup is a breeze too when you use a griddle or large cast iron skillet.
Variations
You can swap out any type of smoked sausage that is already pre-cooked. If you want to use a different protein, you can use any pre-cooked meat. If you want to cook the meat with this recipe, cook the protein first, remove it from your griddle and set it aside, then continue with the recipe as written.
Pairings
When I want to add a green vegetable on the side, I just grill or steam some fresh green beans, brussels sprouts or even broccoli.
Leftovers
If you have leftovers, store them in the refrigerator then re-heat or re-invent them for another meal the next day. This is one meal my husband loves reheating for lunch, but, I also like reheating it for breakfast and adding it to scrambled eggs.
Servings
As the recipe is written, it serves 4 but it is easy to scale up or down. If you scale it up, you’ll need to have a large enough cooking surface to handle the quantity of food. When the potatoes and meat are cooking, they need to have direct contact with the griddle in order to create a browned, crispy texture. So, if you are cooking for a large crowd, you’ll probably need to cook in smaller batches.

Blackstone Cowboy Stir-Fry
Equipment
- Blackstone (or large skillet)
Ingredients
- 1/4 cup olive oil
- 1 pound potatoes 1/8 inch slices
- 1 medium onion chopped
- 2 teaspoons garlic salt
- 1 teaspoon black pepper
- 1 pounds Kielbasa sausage cut into 1/2 inch coins
- 2 bell peppers (any color) seeded and roughly chopped
- 1/2 cup prepared Italian salad dressing
Instructions
- Prepare ingredients as directed and pre-heat griddle to medium-high heat.
- Pour oil onto griddle then add potatoes in a single layer. Sprinkle with onions, garlic salt and pepper. Cook for 5 minutes with lid closed, then flip to cook another 5 minutes.
- Add sausage, bell peppers and Italian dressing to griddle, tossing to combine all ingredients. Spread out to even layer and cook with lid closed for 5 minutes.
- Flip mixture and let cook an additional 5 minutes, serve hot.
