Rim View Rum Refresher Cocktail Camp Recipe: Sweet, Cool Summertime Drink
After a full day of hiking, it feels soooooooo good to recline (hammock preferred) at our favorite camping spot on the rim and watch the sunset with sweet and refreshing camping cocktails!
This Rim View Rum Refresher Cocktail features rum and a few surprises! You can even make it “healthy” with a serving of fruit if you garnish with a big wedge of watermelon. Ahhhh, sip it slow and enjoy the view!

How To Make This Refreshing Cocktail
This cocktail is stirred (not shaken) so you need to make sure you have plenty of ice in the glass before you add the liquid ingredients.
Caution: This recipe calls for a 16-20 oz. glass. If you use a smaller glass, the booze to non-booze ratio goes way up so make sure you use the proper size glass. If you don’t have glasses that are at least 16 ounces, you will want to reduce the amount of spiced rum and melon liqueur you add to the drink.
You are going to fill the glass with ice then add the spiced rum and melon liqueur. Then you’ll fill the glass with equal parts orange juice and ginger ale. If you use a smaller glass, you won’t have enough room to add the orange juice and ginger ale … that gets waaaay too boozy.
I like using non-breakable glasses for my cocktails. But, the drinks are so pretty that I want to be able to see them. That’s why I uses clear plastic tumblers.

To finish the drink off, you’ll add a nice, juicy watermelon wedge and a straw. Make sure you give it a good mix with the straw before taking your first sip of this sweet and refreshing cocktail.
If you want to get really fancy, before you put anything in the glass, you can add a pretty cocktail sugar to the rim.

- Ice to fill a 16-20 oz. glass
- 6 count of spiced rum
- 6 count of melon liqueur
- Splash of orange juice
- Splash of ginger ale
- Watermelon wedge for garnish
Instructions
- Fill a 16-20 oz. glass with ice.
- Add spiced rum and melon liqueur.
- Top with equal parts orange juice and ginger ale to fill the glass.
- Garnish with a watermelon wedge.
- Stir and serve with a straw.
