Equipment

  • Grill or grill pan (to char tomatoes)
  • Pizza pan or sheet of foil (for heating the pizza)

Ingredients

For The Tomatoes

  • 14 cherry tomatoes
  • 2 tablespoons olive oil
  • Salt and pepper to taste

For The Pizza

  • 1 pre-baked pizza crust (small enough to fit in your cooking equipment)
  • 1/4 cup prepared Alfredo sauce
  • 1 cup shredded mozzarella cheese
  • 1 cup pre-cooked shredded chicken

Optional For Serving

  • 1/4 cup Parmesan cheese freshly grated
  • 1/3 cup chopped green onions
  • 10 fresh basil leaves torn or chopped

Instructions

  • Prepare ingredients as directed. See note #1 below.
  • Pre-heat your cooking equipment to approximately 350 F degrees. See note #2 below.
  • In a small bowl, toss the tomatoes in the olive oil, salt and pepper.
  • Use a cast iron grill pan, grill grate or grilling basket to char the tomatoes over medium-high heat on stovetop.
  • Build the pizza on a pizza pan or large piece of foil starting with the pizza crust and then adding the Alfredo sauce, mozzarella cheese, chicken and charred tomatoes.
  • Place the pizza over your campfire, propane grill or in your RV oven or cast iron Dutch oven for baking. All of the ingredients are already cooked in this recipe so you are just toasting the crust, heating the ingredients and melting the cheese.
  • Remove the pizza and top with Parmesan cheese, green onions and fresh basil leaves. If you have a little of the seasoned olive oil leftover from tossing the tomatoes, drizzle it over the pizza too.

Notes

  1. Remove ingredients from refrigerator and allow them to come to room temperature so when they are baked they get heated through and the crust doesn’t burn.
  2. This recipe is so versatile because it can be cooked so many ways:
  • Campfire: Lightly wrap the pizza in foil and place on campfire grill grate above hot coals.
  • Dutch Oven With Charcoal: Make sure you have a large enough oven to accommodate the size of your pizza crust.
