Blackstone Bang Bang Chicken

This Blackstone Bang Bang Chicken is so fast, you can acutally make it in just 15 minutes! That’s what I had to do after getting back to camp late and I wanted to finish cooking before the sun went down!

Why I Love This

This sauce is so delicious, you can use it on almost anything! The great part is that you can make it days in advance and keep it refrigerated until you are ready to use it. That way, you’re just cooking the chicken and tossing it in the sauce when you want a really fast and satisfying dinner.


Pairings

There are many ways to serve this recipe.

  • I like serving it over rice but it also makes a great sandwich.
  • It’s nice to serve a hot green veggie on the side, especially in colder weather. My top picks are green beans, broccoli and brussels sprouts.

Leftovers

This is one meal my husband doesn’t mind just re-heated. I just refrigerate leftovers and re-heat them in the microwave.

This chicken is also great tossed in a cold, leafy-green salad with a little extra leftover sauce.


Servings

This recipe serves 4 but is a really simple meal to scale for larger groups. That’s because you can make the sauce in advance and prep the chicken in advance too.

Cooking is quick and can be done in batches. It’s the perfect meal for larger groups when cooking on a Blackstone griddle.

Equipment

  • Blackstone (if you don’t have a Blackstone, you can just use a skillet or griddle over a campfire)

Ingredients

Sauce Ingredients (see Note 1)

  • 1 1/4 cups mayonnaise
  • 2/3 cup Thai sweet chili sauce
  • 1 teaspoon crushed red pepper flakes
  • 2 tablespoons honey

Chicken Ingredients

  • 1 tablespoon olive oil (may need a little more for griddle)
  • 1 1/2 pounds boneless skinless chicken breasts cut into bite-sized cubes
  • 1 teaspoon paprika
  • 1 teaspoon garlic salt
  • 1/2 teaspoon black pepper

Instructions

  • In medium bowl, combine sauce ingredients. Cover and refrigerate until ready to use.
  • Pre-heat grill to medium-high heat. Pour oil onto grill.
  • When oil is hot, add chicken, paprika, garlic salt and pepper, toss to combine all ingredients and cook till browned.
  • Add half of the sauce to the chicken, tossing to coat evenly. Continue cooking until chicken is cooked through and sauce is caramelized.
  • Remove from griddle, serve with remaining sauce for dipping.

Notes

  1. If you don’t like really “saucy” food, you can cut the sauce recipe in half.
  2. Serving suggestions: You may want to serve the chicken over rice or on rolls as sandwiches.
