Blackstone Cheesy Bacon Chicken
If you have bacon lovers in your crowd, they are going to LOVE this Blackstone Cheesy Bacon Chicken dinner. My husband can’t stop eating this!

Why I Love This
This is one of those meals that pleases almost everyone. It has so much flavor and it’s so satisfying with protein and fiber. Plus, the ingredients are easy to prep in advance so cooking is a breeze.
Variations
You can easily switch up this recipe by substituting beef for the chicken. Just make sure you use a cut that is relatively tender. I recommend using a ribeye, New York strip or T-bone steak.
Pairings
The bacon and cheese add a richness to this dish so I like serving some sort of green vegetable on the side.
In my video, I made Brussels sprouts (with bacon and garlic … yum) but I also like using green beans, broccoli and leafy green salads.
Leftovers
If I have leftovers I refrigerate them and reinvent them for another meal.
- These make a great base for a breakfast scramble, just reheat the leftovers in a skillet then add a few beaten eggs and scramble.
- They also make a yummy hearty sandwich, just reheat in a microwave or covered pan and layer on a toasted bun.
Servings
This recipe serves 4 and can easily be scaled up or down. If you’re cooking for a large crowd, you’ll want to prep all of your ingredients in advance so you can cook efficiently. Make sure you have a large enough cooking surface to handle the job. I can easily triple this recipe and cook it on my 17-inch Blackstone as long as I’m not cooking a side dish at the same time.

Blackstone Cheesy Bacon Chicken
Equipment
- Blackstone (skillets or griddles work too)
Ingredients
- 1 tablespoon olive oil
- 1 1/2 pounds boneless skinless chicken breasts cubed into bite sized pieces
- 1/2 pound bacon cut into small cubes
- 2 medium Yukon gold potatoes washed and diced into small cubes
- 1 teaspoon garlic salt
- 1/2 teaspoon paprika
- 1/2 teaspoon onion powder
- 2 cups shredded cheddar cheese
Instructions
- Preheat Blackstone to medium heat.
- Add oil to one side of grill and toss with diced potatoes. Cook about 15 minutes then toss and continue cooking.
- Add the bacon to the other half of the grill. Cook until browned.
- Don’t remove the bacon grease, add the chicken to the grease and sprinkle seasonings over chicken. Cook through, about 15 minutes.
- Combine the potatoes, bacon and chicken. Layer on shredded cheese. Close lid and continue cooking until cheese melts, serve hot.
