Presto Chango! That’s how I describe couscous. Why? Because it can be anything you want it to be—flavor-wise that is. It’s kind of a cross between rice and pasta but cooks by steaming so it is super simple to make. All you need to do is boil a liquid, take it off the heat, stir in the couscous, cover and let the liquid absorb…no timing, no tending…a camp cooks dream! On its own couscous is really bland; but that’s the beauty of it! You can build any flavor profile you want from this fast and easy food. Here I’ve added layers of flavor with a few ingredients to make this side dish a perfect pairing to your favorite protein. Here’s how you make it. Serves 4.
