Presto Chango! That’s how I describe couscous. Why? Because it can be anything you want it to be—flavor-wise that is. It’s kind of a cross between rice and pasta but cooks by steaming so it is super simple to make. All you need to do is boil a liquid, take it off the heat, stir in the couscous, cover and let the liquid absorb…no timing, no tending…a camp cooks dream! On its own couscous is really bland; but that’s the beauty of it! You can build any flavor profile you want from this fast and easy food. Here I’ve added layers of flavor with a few ingredients to make this side dish a perfect pairing to your favorite protein. Here’s how you make it. Serves 4. Sauté the base
- 1 T butter
- 1 clove garlic-minced
In a medium saucepan over medium heat, melt the butter then add the garlic. Stir until the garlic is softened.
Add the liquid, cover and bring to boil
- 1 c chicken broth
Stir in couscous, take off heat and cover
- 1 c couscous
Let the couscous stand covered until all the liquid is absorbed (usually about 5 minutes.)
Stir in more flavor just before serving; fluff with fork
- 3 T fresh chives-chopped
- 2 T capers
