I don’t know about you but some of our camp days are spent never leaving the campsite … others are spent on the trail taking in some of Arizona’s best scenery. When all-day hikes are part of the weekend, sacrificing flavor for dinner is NEVER an option … no matter how late we return to camp.

How To Make Greek, Tomato & Feta Camping Pasta Salad

You will start this recipe by making a super simple homemade dressing. Whether I am making this at home or at the campsite, I like using a Salad Dressing Shaker that I can measure with and shake in … all in one container.

Alternatively, you can use a whisk in a bowl to make the dressing. You can easily combine these ingredients (olive oil, red wine vinegar, garlic powder, dried basil, dried oregano, pepper, sugar) at home and refrigerate up to a week before using.

You will continue making this recipe by chopping the veggies (pepperoncini peppers, cherry tomatoes, red bell pepper and green onions) while the pasta is boiling.

I like using Mezzetta brand peppers because I can always find them online or in grocery stores. Other brands may have different heat levels, for this salad I recommend using a mild variety rather than a hot one.

Camp Cooking Tip: Many camping salads are actually better the day after you make them … giving those flavors time to marry is a good thing! So, if you decide to prepare this camping side dish at home, you can do everything and transport the entire pasta salad in one container.

BUT, if you won’t be eating this on your first day of a multi-day trip, you may just want to prep the ingredients at home and transport them in separate food storage containers and just toss everything together right before you are ready to eat.

Make sure you have a container set that nests when not in use and has various sizes too.

Ingredients

For the dressing

  • 1/2 cup olive oil
  • 1/2 cup red wine vinegar
  • 1 1/2 teaspoon garlic powder
  • 1 1/2 teaspoon dried basil
  • 1 1/2 teaspoon dried oregano
  • 1/2 teaspoon black pepper freshly ground
  • 1/2 teaspoon white sugar

For the veggies

  • 4 pepperoncini peppers (see Note #1) jarred in brine, sliced into bite sized rings
  • 1 (10 oz) package cherry tomatoes halved
  • 1/2 red bell pepper diced
  • 1 cup crumbled feta cheese
  • 3 green onions chopped
  • 1/2 cup sliced Kalamata olives

For the pasta

  • 1 (6 oz) box Bowtie pasta cooked according to package directions

Instructions

  • Cook the pasta according to package directions.
  • Make the dressing by shaking in a salad shaker or by whisking ingredients in large bowl. Set aside.
  • Chop the veggies.
  • Toss all ingredients together. Then cover and chill. These flavors get better with time so it’s great to make this the day before you are going to serve it.

Notes

  1. I like using Mezzetta Golden Peperoncini Peppers because they are readily available online and in grocery stores.
  2. If our camping trip happens to be an extended extra-long weekend and I want to do most of my camping recipes prep at home, I will transport ingredients in separate Food Storage Containers and just toss everything together right before we are ready to eat.

    We made this last year and loved it. I had to make a substitute for peperoncini peppers (couldn’t find in the store) — but want to try the recipe properly this year. I’m curious if you use fresh or preserved peppers for this recipe.

  4. Oh, this sounds great. I’m not a big olive fan, so I may try this and substitute some extra tomatoes, red peppers, and feta to compensate for cutting out the olives.
