Hi,
We are in a FCRV camping group in Colorado. I’am the wagon master for the month of August. Our camp outs are themed each month. We are camping at Boyd Lake State Park. We are going to have our paddle boards and two boats in the group. There should be about 10 families.
Our theme is going to be a Jimmy Buffet Margarita beach party. We will bring a main dish and the others bring sides and desserts. Do you have any ideas that you will share with me?

Hi Eric, Congratulations on being a wagon master! I know how much fun that is but I also know it is a lot of work too. It is a labor of love for sure. I love your theme: Jimmy Buffet Margarita beach party! I do have quite a few ideas for you. Beaches always go with seafood so here are a few ideas: Easy Grilled Mahi Mahi With Mango Salsa, Chili Lime Shrimp Tacos With Slaw & Creamy Jalapeno Sauce, One Pot Camping Cast Iron Fish, Grilled Halibut and Shrimp And Asparagus Foil Packs. Grilled meats and veggies are always a nice option like this Grilled Pork Loin Roast and these Chicken And Veggie Camping Kabobs (check out the Hawaiian variation for island flavors.) If you want to do affordable sandwiches, you can do sloppy joes but I really like my Diablo Sandwich variation that takes a traditional sandwich up a level. These are also nice if you want to make a big batch ahead of time and just keep warm or refrigerate and reheat right before serving. Have a GREAT TIME and enjoy the party! Happy camping, Kim
